Loaded Brussel Sprouts

The best way to improve your health is to increase the amount of green veg you eat. It’s a simple tip, but not always the easiest. Green veg doesn’t have to be boring or boiling. This is a fantastic, festive recipe that works well in tandem with evening meals. I find this is a great option for accompanying roast dinners.

What You’ll Need


  • Brussel Sprouts
  • White Onions
  • Fresh Rosemary
  • Fresh Sage
  • Garlic
  • Pancetta
  • Walnuts
  • Collard Greens
  • Olive Oil


  • Chop up 1 large white onion and 2 garlic cloves and add to a pot filled with 2 tablespoons of olive oil
  • Add salt and chopped up fresh Sage and Rosemary
  • Then place in a packet of Pancetta and stir in to the mixture thoroughly. Let cook for 5-10 minutes on a medium heat until all of the ingredients start to soften
  • Add the Brussel Sprouts and Collard Greens and stir in to the mixture
  • Leave for 5-10 minutes on ¬†low heat. Keep stirring the mixture as you go
  • Add a handful of crushed Walnuts and stir in
  • Serve with fresh Rosemary as a side dish for roast dinners
