Spicy Lime & Ginger Chicken Thighs - High Protein, Low Carb Recipes

Lime & Ginger Chicken Thighs


We’ve all been through the classic “chicken and broccoli” diet. As much as we like to kid ourselves, it’s hard to get away from. This is my twist on a standard dietary food that turns it in to a taste sensation. Who says eating well has to be boring.

What You’ll Need


  • Chicken Thighs
  • White Onions
  • Ginger
  • Garlic
  • Green Chilli’s
  • Fresh Coriander
  • Lime
  • Carrot
  • Double Cream
  • Olive Oil


  • Pour 2 tablespoons of olive oil in to a large pan and place the chicken thighs face down. Leave to cook on a medium heat
  • Take a separate large pot and coat with a tablespoon of olive oil
  • Add crushed garlic (2 cloves), 1 large white onion (diced) and two finely chopped thumb sized pieces of ginger
  • Stir and let the onions and ginger sorted before adding the juice of 1 lime
  • Add 2 medium heat green chilli’s and a tablespoon of double cream and stir in thoroughly. Then let the contents simmer on a low heat for 5-10 minutes
  • Once the chicken thighs have browned (skin side), add the pieces to the pot and cover with the vegetable mixture
  • Leave for a further 5-10 minutes to cook through
  • Serve with chopped fresh coriander, lime juice and grated raw carrot
